RECIPE: SPICED CAULIFLOWER AND BLACK BEAN SOUP
Makes 6 portions
1 medium caulifower
1 tin black beans
1 red onion sliced
2 carrots roughly chopped
500ml veg stock
juice 1 lime
2 tsp Luchito spiced chipotle paste
1 tsp cumin
2 tbsp olive oil
salt + pepper
Soften the onions and carrots in olive oil on a medium heat until they just start to brown, then deglaze the pot by adding the veg stock. Add the cauliflower (chopped into flourets) and add more water until just covered.
Boil for a good 20minutes then add the black beans and top up the water if needed. Leave for another 10 minutes, then turn off the heat and add all other ingredients. Season with salt and pepper gently and top up at the end.
Whizz up the soup with stick blender or similar and leave to cool for a few minutes before you taste. Once not boiling hot you can taste and add more salt, lime, pepper or spice if needed. I added a good tsp of fresh ground pepper for flavour.
Topped with a olive oil and some charred, spiced cauliflower flourets (recipe to come!)
