CAULIFLOWER RICE, POMEGRANATE, SPRING ONION + CORIANDER
Serves 5 / 6 as a side
Ingredients:
1 medium cauliflower
1 pomegranate
3 spring onions - just green bits
large handful coriander
Dressing: 1tbsp olive oil, 1tbsp maple syrup, 1 juice lime + zest, ½ tbsp salt, pepper.
Chop the cauliflower into flourets then whizz up in a blender until fine with a consistency of a small grain or fluffy ‘rice’.
De-seed the pomegranate and finely slice the green tops off the spring onions (you can use the bulbs as a base for a soup or risotto).
Mix the cauliflower, pomegranate and spring onion together with chopped coriander.
Make the dressing by whizzing it up in a juicer / liquid blender. Taste and add more lime or maple syrup as needed - depending on how juicy your limes are this could vary the taste a lot. You want a limey flavour but balanced nicely with the sweetness of the syrup.
Drizzle 1/2 over the salad and stir to taste, then either add more if needed, or put the rest in the fridge.
