RECIPE: BROCCOLI, SPINACH AND B12 SOUP
Makes 4 / 5 portions
2 large broccoli flourets, roughly chopped
4 handfuls spinach
1 onion, sliced
3 carrots, roughly chopped
500ml veg stock
4 tbsp B12 nutritional yeast flakes
2 tbsp olive oil
juice 1/2 lemon
salt + pepper
Gently heat the onions, carrots and broccoli stems for a few minutes in olive oil until soft. Add the veg stock and stir in the remaining broccoli. Add any extra water to make sure all ingredients are covered. Leave to boil until the carrots and broccoli stems are soft.
Add spinach, stir to combine. Add yeast flakes, lemon juice and season with salt + pepper to taste. Use a blender to mix whizz up until smooth.
I added some cashew cheese (see other recipe), and you can add some extra flavour by drizzling with truffle oil and extra black pepper!
