Recipe: Date, Hazelnut + Lemon Energy Balls
Makes 15-20 size dependant
Ingredients:
300g pitted dates
125g hazelnuts
50g flaked almonds
1.5 tbsp carob powder
juice and zest 1 lemon
Put the hazelnuts in a food processor and whizz up for a few seconds, make sure it doesn’t get too fine, you want to keep a good nutty texture for the energy balls and there’s more mixing to do!
Remove hazelnuts and add dates, whizz up until they’re as broken down as you can get them, depending on how juicy they are it might take a while. When it’s ready they will start to come together in a larger lump.
Add the hazelnuts, lemon zest, carob powder and half the lemon juice. Whizz up until just mixed.
Then add the almonds, whizz until just mixed again, then taste. Decide if you need more lemon… you’ll know! Should be a great balance between the bitter carob and zingy lemon. Once you’re happy with the taste, mix a little more until bound well but still nutty.
To play with favours, try lightly toasting the almonds or adding some toasted coconut flakes :)
