Recipe: Smokey Winter Aubergine + Tomato Stew
Ingredients:
1.5 aubergines chunky
3 big vine toms chunky
tin chopped tomatoes
tin fava beans
smoked paprika
lots of parsley
salt + pepper
veg stock 500ml
bit of chipotle
zest + juice of half lemon
onion, 3 garlic cloves
umami paste
Lightly fry onions + whole garlic cloves in coconut / olive oil until translucent then transfer into your casserole dish / crock pot.
Add... chopped tomatoes (tin and fresh), aubergine, veg stock, umami (I like to use Hodmedods), lemon juice and paprika... put in the oven on a high temperature for at least an hour.
Remove and add the fava beans, lemon zest, chipotle, and half the parsley. Taste and season a little.
Stew for atleast another hour... mmmmm...
Remove, taste and make final adjustments with salt + pepper, acidity (lemon) and spice levels.
I like to serve with brown rice or smoked quinoa (another little gem from Hodemedods) and some green leaves.
