Please enjoy this collection of my favourite recipes :) Tried and tested many times to lots of happy bellies!

Apricot, Date, Brazils + Coconut Energy Balls

(makes approx 24)

Ingredients:

150g dried apricot

15 pitted medjool dates

100g oats

30g hemp seeds

50g desiccated coconut (plus extra for rolling)

40g chia seeds

60g grated fresh ginger

130g brazil nuts

Place the dates, oats and apricots into a food processor and blitz until well combined - it may seem dry but it will come together after a couple of minutes. Then add the hemp seeds, coconut, chia seeds, grated ginger + brazil nuts with a 1/2 tbsp water and blitz again until combined. You want a soft ball, with some pieces of brazil nut for texture so don’t blitz so far that it turns into a paste.

I like to use scales and measure out 30g at a time (this will make about 24), but you can also measure by eye or use 2tbsp. Roll into balls then tip out the rest of the coconut onto a plate a roll the ball in the coconut to give a pretty finish!
